Beef prices have climbed sharply in recent months, and two Kansas City-area barbecue restaurants say they are absorbing the cost rather than raising menu prices, at least for now . . . In Texas, some barbecue restaurants have already removed brisket and ribs from their menus entirely. Kansas City-area owners said that is not an option for them.
