The poseur aspect of this place makes it seem kinda lame.

However . . . 

What we like is that smarter people are selling this as a proving ground for up & coming Kansas City chefs, servers and restaurant managers. 

A low-risk place where workers can get a start is a much better sell along with a place where adventurous locals can enjoy intriguing and experimental foodie offerings.
